Pizza, Pizza, Pizza!!


A good friend of mine once proclaimed, there are only really 3 types of pizza's.

Now I've not found any evidence to support that claim but there was of course one original pizza. This pizza, it can be reasonably assumed, was the Neapolitan Pizza. 


Neapolitan 

Simple but perfect, as so many great things are. Tomato, Mozzarella and Basil. Red, white and green. The colours of the Italian flag. 

I recently had a real pizza phase in my life (to be honest, I'm probably still in the phase). I've had a  cheeseburger phase and a donut phase, which were both magnificent in their own right but I'd argue that my pizza phase was the most enjoyable. I was inspired by The Pizza Show, a TV series by pizzaiolo Francesco (Frank) Pinello who goes on a worldwide pizza discovery tour. From the classic New York slice to the Chicago deep pan pie's and all the way back to its origins in Italy. 

I'm currently enjoying another limited series on Netflix, called Chef's Table: Pizza and it's very good. The show follows six masters of their craft as they each in turn add something to the wonderful world of pizza's. This circular flatbread has such an interesting history. 

The first thing I learned to appreciate is the fact that pizzas from the well known American pizza joints like Domino's, Papa John's and Pizza Hut can't reasonably be perceived as pizza's. They are mass produced American abominations, insults to the original pizza. The original Italian pizzaiolo's woud be turning in their graves. 

I will continue with my pizza journey. How can I not, as there just aren't many things more enjoyable than a stone baked pizza with a beer on a sunny day...
